In this post, we are going to teach you an easy recipe for Kulfi- homemade, the Indian version of ice cream. Have you ever tasted Kulfi? It’s a delicious type of popsicle with a creamy milk base. The big difference between Kulfi and western ice creams is that there are no eggs in Kulfi. It’s made with a base of milk, sugar, bread crumbs and other ingredients, such as saffron or dry fruits. Creamy and cold, it’s perfect for the Summer!
There are several flavours of Kulfi: malai (cream), mango, badam (almonds) and Kesar Pista (saffron with pistachio) are the most common ones. Kulfi is very popular in Indian households, restaurants and street shops, being less common in industrialized versions. It tastes delicious and nothing like else you’ve eaten before! This recipe for kulfi is quite simple and the ingredients can be found at any supermarket. Check it out below.
- 0.5 Litre full cream milk
- 4 slices of white bread
- 150 grams of sugar
- 9 cashew nuts
- 8 almonds
- 10 pistachio ( without salt)
- Kesar/ Saffron ( optional)
- 2-3 Cardamom
- Coconut powder
The recipe instructions for Kulfi step by step
Step 1: Pour the milk in a heating pan and put it for boiling. Keep the gas stove on medium flame.
Step 2: Take the 4 slices of plain white bread. And cut the brown sides of the bread with a knife.
Step 3: Chop the bread slices into smaller pieces. And grind them into fine powder in a grinder.
Step 4: Cut the dry fruits, cashews, pistachio, and almonds into small fine chunks, in order to add in the kulfi mixture.
Step 5: Once you see the milk is starting to boil. Add the bread powder to the milk and keep stirring it. Make sure that there are no balls formed in the milk.
Step 6: Add Kesar/saffron leaves to the mixture and keep stirring. You will see soon the milk mixture will turn yellowish in colour. Also, it will start thickening as well.
Step 7: Now, add the dry fruits to the mixture and keep stirring it for another 2-3 minutes. Soon the mixture will start becoming thicker and thicker.
Step 8: Add the sugar to the mixture and keep stirring it so the sugar gets dissolved in it.
Please note, you can make it with sugar-free as well. As a bit healthier option for you.
Step 9: Crush the cardamon and remove the cardamom peel and the seed powder to the mixture for the sweet aroma in the kulfi.
In some cases, in India people add rose water, or kewra essence or kevda water. In order to add a different flavour to the kulfi.
Step 10: Turn off the gas stove, and let the mixture cool down for 10-15 minutes.
Step 11: If you have the popsicle mould / or ice cream cups, pour the mixture into it and cover them with the help of aluminium foil or the cap of the mould. Now put this in the freezer and let it cool.
Please note you can use ice cream sticks if you do not have a mould with the stick and cover them with foil.
